Starting off right...


Pancakes in the morning are the absolute best way to start the day, especially these ones!  This morning I made blueberry banana pancakes (my boyfriends idea).  These fluffy whole wheat pancakes were packed with sweet fruity flavor, so much that they didnt even need syrup.  I have had blueberry pancakes before, but adding the banana to the mix defininately kicked up the flavor.  I have noticed that I have been creating a sort of blueberry trend on my blog lately and I frankly dont know what has me gravitating towards recipes with the tiny blue fruit.  All I know is that everything with blueberry is mighty tasty but ill try to mix it up!  Here is the recipe for the pancakes.

Simply Sweet


I got a request from my family for a sweet and simple dessert that was not too heavy on the stomach, this angel food cake parfait was the first thing that came to mind. This dessert is so simple to make, what you will need is:

1 box Vanilla Instant Pudding
1 Angel Food Cake
The desired amount of sliced Strawberries and Bananas
1 tub of Whipped Topping
1 small bag of sliced Almonds

To begin, make the pudding according to the package directions.  Slice the angel food cake in 3/4 inch slices and place a layer on the bottom of a deep dish.  Then put a thin layer of pudding followed by strawberries and bananas.  Repeat the steps until the ingredients have been used up.  Top the parfait with whipped topping and sprinkle with sliced almonds. Refrigerate before eating.

I learned this simple and almost obvious recipe from my boyfriend's family.  It is an easy and satisfying dessert that everyone will love.

Sweet and Tart


Today I made blueberry scones with a lemon glaze and I am left wondering why i never made them before.  They are a lot different from store bought scones that are often dry and crumbly, these are soft in the middle with a firm outer shell.  The original recipe (here) used an orange glaze which I would have done if I had any oranges but since I didnt have any and the combination of blueberry and lemon is so classic, I decided that I would modify the recipe to what I had on hand.  These turned out so good, I would even consider using this as the base recipe for other scones I make in the future. A Classic...

 

My little sister came to me the other day with the request that I make her some treats for her school bake sale, which benefits a charity who provides fresh water to those countires that need it. Since baking is something I truly enjoy (if it wasnt obvious), I kindly agreed to help her with some middle school friendly treats.  I made her chocolate chip cookies (found here), brownies (for a later post) and cinnamon rolls (previously posted).  I figured that these were all kid friendly desserts that would sell well towards the cause.  These cookies turned out delicious, they were chewy on the inside with a slight crunch on the outside.  I havent had chocolate chip cookies in a while and after eating these I couldnt figure out why it had been so long.  If you love chocolate chip cookies, you will love this recipe.

Dinner for Seven

Tonight I made dinner for my whooolleeeee family.  I was in the mood for a dish that was refreshing  and contained pasta pasta pasta!  I found the recipe here and was very pleased with the results.  The dish was made with linguine pasta, a fresh lemon sauce (more like a light dressing), peppery arugula leaves and deliciously sauteed shrimp.  I paired this meal with sauteed asparagus and bruschetta found here.  This dish is ranked up with some of my favorites and is definately worth a try!
