Madeleine Cookies



I recently started working at Starbucks where they sell these shell shaped cookies in packs of three.  These cookies sparked my interest when a customer came in and was willing to purchase a whole flat of the spongy delights, could they really be that tasty? Before baking these adorable cookies I had yet to try them, but have had the desire to bake them since realizing their popularity.  I got my hands on a recipe but never had the right mold to make them, so when I received a mold for my birthday I was eager to bake up a batch. I was very surprised by the simplicity of the recipe, it consisted of every day baking ingredients that most people have at home, but was even more surprised by the great tasting dessert that came out of it.  The cookies came out in spongy, lemony, lightly sweet perfection.  I decided to bake half of the batter as the recipe called and half of it with the addition of min chocolate chips, the simple nature of the recipe allowed me the freedom to customize flavors whichever way I wanted.  Both ways came out delicious and I cant wait to make more variations of this recipe.
